Swanson's Potato Topped Pot Pie

When the air outside turns crisp, soups and pot pies are great ideas for meals to warm us up. Swanson has introduced an interesting twist to the traditional pot pie--rather than having a pastry top, these new pies are topped with a big fat layer of mashed potatoes.

With a resemblance to Shepard's Pie, both the chicken and beef varieties are very tasty with a delicate thin pastry shell on the bottom and sides and thick chunks of meat and vegatables on the inside. Inferior pot pies often have way too much gravy--not so with these Swanson pies. The carrots, however, tasted--well, like they've been sitting in a freezer for awhile. Now, the band always opt for the speediness of a microwave delivery, and that may have something to do with it. There is always something wicked cool about how those microwave packages manage to "brown" the food.

What really makes this a winner, though, is the mashed potato top. It seems like a simple enough idea--one wonders why no one has done it before. These are great for stocking up in the refrigerator for a quick, hot lunch or even snack (the band has been know to eat a steak for a snack).

Note the huge dose of sodium though, but if you're looking for vitamin A, here's your answer.
